Vineyard location and profile: Sourced from barbera, dolcetto, and freisa grapes grown in various outstanding Monferrato viticultural areas. The blending together of these grapes, each of them among the most traditional and highly-prized in this area, as well as our long familiarity with them, allow us to create a balanced, harmonious wine with a distinctive and attractive personality. Vinification and ageing: As soon as the grapes are harvested, they are subjected to carbonic maceration, in which the intact grape clusters are placed in CO2-saturated closed tanks where an intra-cellular fermentation begins inside each grape; each lot of grapes goes through this procedure separately. The process lowers the acidity and produces extremely rich aromas redolent of fruit and flowers. Vino novello is a wine meant to be enjoyed in its exuberant youth, by the spring following its harvest date, at the very latest. Sensory Profile Colour: Purple-tinged deep ruby-red. Bouquet: Very fruity, yet elegant and light, with pronounced carbonic maceration character, exuding scents of raspberry and cherry. Palate: Young and zesty, intriguing fruit-laced background.
